Two Ingredient Chocolate Muffins (no protein powder)

Ingredients:

6 oz sugar free chocolate chips, plus a few to sprinkle on top

3 large eggs

Method:

Preheat oven to 350°F. Separate egg whites from egg yolks into two separate bowls, making sure not to get any yolk into the whites. Beat egg whites until stiff peaks form about 4 to 5 minutes. Next, melt chocolate chips (I use a microwave) Fold egg yolks and melted chocolate into egg whites until welcome combined. Spoon batter into muffin tins until about half full. Sprinkle a few chocolate chips on top of each muffin. Bake for 15 or so minutes. Remove from oven and let cool. These will flatten some. That is the nature of anything made with just eggs. It won’t affect the taste. This makes nine muffins. The macros will vary depending on what brand of chocolate chips used.

  • Fiber: ~4g
  • Sugar alcohols: ~5.3g
  • Net carbs: ~1.3g
  • Protein: ~2g
  • Fat: ~6g
