Stuffed Pepper Casserole Personal Size

Ingredients:

8 oz ground beef

1/4 cup diced onion

1 chopped garlic clove

Salt and pepper to taste

1/2 cup diced green pepper

1/4 cup diced tomato

1/4 cup riced cauliflower

1 tbsp tomato paste

1 tbsp grated Parmesan cheese

1/2 cup shredded mozzarella cheese

Method:

Heat avocado or olive oil in a medium skillet. Add onion, garlic and ground beef to the skillet and cook until ground beef is browned through. Add salt and pepper to taste. Once that is done, add all other ingredients to the skillet, except for mozzarella cheese, and cook until vegetables are soft. Transfer to a small casserole pan and top with mozzarella cheese. Bake in a preheated oven at 375 degrees for 8-10 minutes or until cheese is melted and golden brown.
