Lemon Snow Cone Simple Syrup

Ingredients

  • 1 cup water
  • 1 cup granular Monkfruit (make sure you use a monk fruit without erythitol because erythitol crystallizes after it’s cold)
  • 3/4 cup fresh squeezed lemon juice or about 5-6 lemons (more if you like strong lemon flavor)

In a small pot simmer water and monkfruit until dissolved to clear. Remove from stove and let cool. Stir in lemon juice and refrigerate. Serve cold poured over shaved ice.
