
This is a great one skillet meal, perfect for a busy weeknight or lazy weekend dinner. It is low carb, high in fat and protein.
Ingredients:
- 2 lbs. ground beef
- 1/2 cup diced onion
- 1 tbsp butter
- 6 tbsp taco seasoning (https://lowcarbrevelation.com/2022/05/25/homemade-taco-seasoning/)
- 1 cup riced cauliflower
- 1 can Rotel tomatoes
- 12 oz Mexican cheese cheese
Saute onions in butter then add and brown ground beef. Drain and stir in taco seasoning, tomatoes and cauliflower. Top with cheese and cover until cheese melts. Scoop into a bowl and add toppings.
