Beef Enchilada Casserole For One

Ingredients:

  • 1/2 lb ground beef
  • 1/4 cup diced onion
  • 2 heaping tsp taco seasoning use code lowcarbrevelation for a discount
  • 2 Egglife wraps
  • 1/2 cup enchilada sauce or salsa verde
  • 4 oz Colby jack cheese

First brown the ground beef with onions on the stove top. Next add the taco seasoning and let simmer for a few minutes. Layer the beef, enchilada sauce, cheese and egg wraps in a small 6 inch round pan. Bake in a preheated, 375° oven for about 15 minutes or until cheese is melted and bubbling.

Add desired toppings

Serving size: 1/2 of casserole
