Pickled Onions

  • 1 large red onion
  • 1 cup white vinegar
  • 1 cup water
  • 1-2 garlic cloves crushed
  • 1 Tbsp granulated sweetener

In a small saucepan, add vinegar, water, garlic cloves and sweetener

Bring to a boil on the stove then immediately remove from heat. Stir until sweetener has completely dissolved. Peel and slice onion into thin strips. Place onions in a glass jar. Pour liquid over onions and stir. Let cool, then cover with a lid and refrigerate for 24 hours for best flavor. Keep stored in refrigerator for up to two weeks.
