Pizzelle

Ingredients:
4 large eggs
⅔ cup Monkfruit granulated sweetener
1 to 2 teaspoon extract of choice (anise, almond, vanilla or lemon)
½ cup butter, melted
2 cups nut flour
½ tsp baking powder
¼ teaspoon salt
Mix all ingredients together with an electric mixer. Scoop a tablespoon at a time into Pizzelle Maker. They only take about two minutes so don’t walk away. Let cool on cooling rack. They will be pliable until cool then they will crisp up. You can mold them while they are warm.
