What is Keto to me?


The Ketogenic Diet to ME is an extremely healthy, very low carbohydrate diet that includes, whole one ingredient foods that God has provided to us. Good quality Meats, non-starchy vegetables and good healthy fats. Yep, that’s pretty much what I eat and I eat A LOT of it, every single day!!

What is missing from my diet?
Sugar, starchy foods, processed foods, man made vegetable oils, JUNK FOOD from a box, I know!!! I really need to STOP this toxic keto diet, it could KILL me!!! (said with much sarcasm 🙄)

Now, with all that being said, tell me why I shouldn’t be eating Keto again because it’s not healthy?? Why should I put down my food given by God and eat go back to eating that big ole bag of chips? Come on, explain it to me……………………………….. (long silent pause)
I thought so.

I had so much fun filming this video with my husband. We cooked and tried some food we’ve never had before. Armadillo Eggs, Chicken of the Woods mushrooms and I smoked Pork Butt for the first time! It was Fun day. I think my husband needs to be a frequent co-host, he was a hit!

I have a YouTube channel and I get tons of positive feedback on “what I eat in a day” videos. I plan on doing a post here once in a while as well.

I have been eating keto for 10 months now and I have lost 30 lbs, but the best thing is I have brought my autoimmune disease symptoms under control! In addition to that I haven’t had a debilitating migraine in ten months! That’s truly a miracle! I’m so thankful to God for showing me this way of eating.

Now on to my menu for the day.

We are currently at our vacation home on the lake and we started the morning out, like all mornings, with black coffee but it was extra special because it was in the jacuzzi. Best way to start the day.

After morning coffee, I always have my electrolytes. Electrolytes are so important on a ketogenic diet. I love re-lyte powder, I get it from Redmond Real Salt, I have a discount link below (keep reading) if you want to go shop and save some money.

I practice intermittent fasting so my first meal today was at Noon. I had four strips of bacon, two scrambled eggs in bacon grease and Gouda Cheese, avocado sliced and sprinkled with Tajin seasoning and a cup of coffee with heavy cream. A very satisfying breakfast. The fat and protein will keep me full for a few hours.


I had a Two Good yogurt, pumpkin, yum! That will put you in the mood for Fall! I put a couple of crushed pecans on top…so good!

I also had a small plate of meat and cheese. What could be better! A few slices of white cheddar, some pepperoni slices and some salami. This is great for taking on the go.

Ahhh… dinner. My absolute favorite…a giant ribeye coated with melted butter. I had a side of broccoli with butter and Redmond Salt, the very best. Oh and don’t forget re-lyte electrolyte powder!

It’s the end of the day and today I feel like a sweet coffee beverage. I have nespresso coffee, a little heavy cream, one pump of Torani Monkfruit sweetened Vanilla and a little homemade whip cream for the top. I have the best homemade whipped cream canister dispenser. And that’s a wrap for today. I stop eating around 6pm. I drink water, sometimes carbonated, while fasting and even a plain hot tea if I want a little something else.

Keto Lifestyle What I Eat In A Day Blog

I have been living a Keto Lifestyle and it has changed my life. I have had joint pain issues for years. Doctor and Physical Therapy visits to no avail. I was diagnosed with Autoimmune Disease, Lupus & Borderline RA. I have been told by my doctors to eat Vegan. I tried it for 6 months and no difference. I have tried Gluten Free, Low Fat and a few others, no difference, until I tried Keto. My body is healing! Not only have I lost some weight but I have no joint pain issues whatsoever! I also have a ton of energy and over all I just feel wonderful. So I started a YouTube channel and this blog so I could share recipes and tips and hopefully some of you can find benefit as well!

Today is just a simple “What I eat in a day” blog. I feel sharing these helps others to learn what to eat. So without further ado, here is todays menu.

I started eating at 10:00 AM. I do intermittent fasting most days, this is not necessary but I do find it beneficial to me.

I had scrambled eggs in bacon grease, my favorite, and bacon, (I can throw down on some bacon), and nespresso coffee with a teaspoon of butter, yum! That’s it for breakfast, the fat and protein should keep me full for a few hours while I work and run errands.

At lunchtime I wasn’t super hungry so I opted for some yogurt. I was wanting something sweet and tart so I took a True Lemon Lemonade drink mix packet and stirred it into 3/4 cup plain unsweetened Fage full fat Greek yogurt. I like to try different flavors. It’s hot out today so this tasted refreshing.

I topped with a few blueberries. It was delicious and just what I needed to take the edge off until dinner time.

This was a very filling dinner but I did save room for dessert.

Strawberries that I marinated in a very fine, aged Balsamic Vinegar and topped with a shot of whipped cream. A great day to end a day of eating. I may have a cup of coffee also. Thanks for taking the time to read my blog!
