Keto Bacon Wrapped Cheese Dogs

Ingredients:

  • 4 Hotdogs
  • 4 Bacon Slices
  • 1/2 Cup Shredded Pepper Jack Cheese

Cut slits lengthwise down hotdog, stuff with cheese, wrap with bacon. Place in airfryer at 400 degrees for 12 minutes.




Keto Sloppy Joes

This is a great low carb sauce. It can also be used as a bbq sauce. You can add hot stir crushed red pepper if you want it spicy.

I like to serve it on top of chaffles and top with my keto cole slaw. So good!

Ingredients:

  • 2 lbs ground beef
  • 1/3 cup diced onion
  • 1/3 cup diced green pepper
  • 1/2 cup sugar free low carb ketchup
  • 1 Tbsp tomato paste
  • 1 Tbsp Brown Monkfruit sweetener or swerve
  • 1 tsp yellow mustard
  • 3/4 tsp chili powder
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Xanthan gum

Start by browning ground beef, onion and pepper in a little olive oil or butter.

Mix the rest of the ingredients together to make the sauce.

After the ground beef is cooked, drain and add sauce. Let this simmer for 10-15 minutes on low.

Philly Cheesesteak Green Peppers

Ingredients:

  • 3 Green Peppers cut in half and seeded
  • 1 lb Shaved Beef (you could also use ground beef or chicken, etc,)
  • 1/4 Cup Diced Onion
  • Sliced Mushrooms if desired
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1/2 tsp Pepper
  • 6 Slices Provolone cheese

Cut and clean green peppers. Drizzle with olive oil and bake for 6 minutes at 375 degrees.

Sauté onions and mushrooms in butter then add shaved beef and seasonings. This cooks up very quickly.

Once meat is cooked, stuff peppers with meat filling and top with provolone cheese.

Bake in oven at 375 degrees until cheese is melted and a little golden brown. About 8-10 minutes.

Makes 6

20g Protein

13g Fat

Keto Submarine Pickle Sandwich

This is a great low carb way to eat a sandwich! In my opinion, better then lettuce wraps. I found giant pickles at Sam’s Club.

Scoop out the seeds and make room for the toppings.

My choice of toppings, Provolone, Turkey, Tomato, Lettuce and Spicy Brown Mustard.

Pile them high…So delicious!

Keto Hotdogs

Ingredients;

  • 3/4 cup shredded mozzarella cheese
  • 1 Tbsp Cream Cheese
  • 1/2 cup almond flour
  • 1 egg
  • Pinch of salt
  • 2 Tbsp melted butter

Makes 6 hotdogs

Melt the two cheese’s together in microwave in 30 second intervals, stirring in between until melted.

Stir in almond flour and egg until dough forms.

Place dough between two pieces of parchment paper sprayed with nonstick spray and roll out.

Cut dough into six strips with a knife or pizza cutter.

Wrap one strip around each hotdog and lay on a baking sheet. I use nonstick spray. Bake in a 350 degree oven for 15 minutes or until golden brown. I use my air fryer and it takes about 12 minutes. I flip them over the last couple of minutes so the bottom’s can brown.

Remove from oven and brush with melted butter and return to oven for another minute or two.

Add a little mustard and enjoy!

This is my best egg white bread yet! I’m finding how important it is to weigh instead of measure the egg white powder. The texture is amazing!

Keto Bread Egg White Bread PSMF Bread

This recipe is based on Maria Emmerich’s Easiest Protein Sparing Bread recipe.

It is better if you weight the egg powders on a scale accurately. The texture is much better when weighed out vs. measuring.

1 1/2 cups of water (354ml)
120g egg white protein powder (1 1/2 cups)
1/2 tsp cream of tartar
1/2 tsp redmond real salt
1/4 cup allulose (36g)
6g egg yolk powder (1 tablespoon)

Preheat the oven to 325 degrees. Add the water to the bowl of your stand mixer and then add in the egg white powder, cream of tartar, salt and allulose. Start the mixer with the whisk attachment on low speed. Gradually increase the speed until full. Mix on full speed for 5 minutes. Reduce speed to low, add in the egg yolk powder and mix just until combined and no lumps are left. Spread the batter into a large parchment paper lined loaf pan. Bake in the preheated oven for 40 minutes. Buns, 12-16 minutes, baguettes, 18-20 minutes. Remove from the oven and allow to cool in the pan on a wire rack for about 10 minutes. Remove from the pan and allow to rest on the wire rack until completely cool to the touch. Slice and enjoy.

Macros: Total Carbs 0.1g, Fat 0.5g, Protein 6.6g, 38 calories

Keto BLT Pizza Low Carb

Here is my version of BLT Pizza. It is low carb and Keto friendly. I use fathead pizza dough as my crust. Here is a video on how I make the dough: Fathead Pizza Dough

I pre-bake my crusts and store them in the freezer. They thaw quickly and are great to have on hand when you get a pizza craving. I use Mayonnaise as my pizza sauce.

Next, I top with pre-cooked bacon chopped into bite size pieces.

Before going into the 400 degree oven, I top with mozzarella cheese.

Since the crust is pre-baked, I only need to melt and brown the cheese. This takes about 10-12 minutes.

Then I top with shredded iceberg lettuce and tomatoes.

Bacon and Egg Salad Sandwiches Recipe

Ingredients:

  • 3 Eggs
  • 1/2 C Mayo
  • 2 T Dijon Mustard
  • 1/2 t Salt
  • 1/4 t pepper
  • 2 T Chopped Bacon

First, do a rough chop on the eggs

Add Mayo, Mustard, Salt & Pepper

Mix in the chopped bacon. You can use fresh cooked bacon but I tried this chopped bacon from Aldi. It tastes good.
