Swedish Meatballs

Ingredients:
2/3 pound ground beef
1/3 pound ground pork
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1/4 teaspoon allspice
One small onion minced
One egg
1/4 cup beef stock
1/4 cup crushed pork rinds
Gravy:
1 teaspoon xanthan gum
2 cups beef broth
4 ounces sour cream
Salt and pepper to taste


Instructions:
Preheat oven to 350°
Sauté onion in butter until translucent
Transfer onion to a large bowl and add meats, spices, egg, and pork rinds. Mix gently until combined.
Melt 1 tablespoon butter in a skillet, form meatballs and cook until outside are evenly browned approximately five minutes. Meatballs will still be pink inside, transfer to a baking dish.
Pour 1/4 cup of broth into dish over meatballs, cover dish with foil, bake 25 minutes.


Gravy:
Turn meatball drippings on medium heat pour broth into drippings, slowly whisk in xanthan gum. Simmer until thick, stirring regularly. Add salt and pepper to taste. Remove from heat and stir in sour cream and pour over meatballs just before serving.

You will get the best result in texture if you weight the egg powders on a scale accurately. The texture is much better when weighed out vs. measuring.

1 1/2 cups of water (354ml)
120g egg white protein powder (1 1/2 cups)
1/2 tsp cream of tartar
1/2 tsp salt
1/4 cup allulose (36g)
6g egg yolk powder (1 tablespoon)

Preheat the oven to 325 degrees. Add the water to the bowl of your stand mixer and then add in the egg white powder, cream of tartar, salt and allulose. Start the mixer with the whisk attachment on low speed. Gradually increase the speed until full. Mix on full speed for 5 minutes. Reduce speed to low, add in the egg yolk powder and mix just until combined and no lumps are left. Spread the batter into a parchment paper lined loaf pan. Bake in the preheated oven for 40 minutes. Remove from the oven and allow to cool in the pan on a wire rack for about 10 minutes. Remove from the pan and allow to rest on the wire rack until completely cool to the touch. Slice and enjoy.

Egg Roll In A Bowl

  • 1 tsp sesame oil
  • 1 lb ground beef
  • 1/4 cup diced red onion
  • 2 tsp minced garlic
  • 1 tsp salt
  • Pepper to taste
  • 1 tsp ground ginger
  • 1 14oz bag coleslaw mix
  • 1 Tbsp rice vinegar
  • 1/4 cup Tamari sauce
  • Chopped green onion for garnish

Heat sesame oil in a large skillet, add onion, garlic and ground beef. Brown Ground meat along with onion and garlic until brown. Add salt, pepper and ginger. Add Tamari sauce, vinegar and coleslaw mix. Stir and cook until slaw is soft or desired texture. Top with green onions.

Keto Creamed Cucumbers Side Dish

Ingredients:

1 large cucumber, peeled and sliced

1 slice red onion

1/4 cup sour cream

1 Tbsp olive oil

1/2 tsp garlic powder

1/2 tsp salt

1 tsp dill

2 Tbsp lemon juice

Mix all together and refrigerate




Keto FatHead Pizza Dough

Ingredients:

  • 1-1/4 Cup Mozzarella Cheese
  • 6 oz Cream Cheese
  • 3/4 Cup Almond Flour
  • 2 Eggs
  • 1 tsp Garlic Powder

Melt Cheese together in microwave for 1-2 minutes. Stir in the rest of the ingredients and press between parchment paper. Bake pizza crust at 400 degrees for 6-8 minutes. Dough will not be fully baked, just firmed up. Add desired toppings and finish baking in oven 10-15 minutes.

Keto Deep Fried Chicken Wings

We make the most delicious chicken wings! We deep fry them in Beef Tallow that we make ourselves. I did a YouTube video on how we make beef tallow here: https://youtu.be/3nwxgp2cbWQ

I suppose you could use another kind of oil but beef tallow gives the wings an amazing flavor. UPDATE! I recently tried frying wings in bacon grease and they came out amazing!

The beef tallow is white and a solid. It melts quickly when heated up. I use an iron skillet. You could use an electric fryer as well. If you do fry it on the stove, be careful of the grease dripping on the fire. You can have a grease fire very easily.

While the tallow is heating up, I season the chicken wings.

I season both sides.

Carefully, drop the wings into the heated oil. I don’t take the temperature, I just wait until the oil is bubbly.

I watch the stove constantly when I’m frying. I stir and flip the wings around.

When the wings are golden, remove and drain on paper towel.

Just place the wings in a bowl with some of the sauce and toss to coat.

Serve with celery and Ranch or Blue Cheese. I prefer Blue Cheese. They are so good and keto friendly!

Big Mac Salad

This recipe is all about the special sauce!

Ingredients for Sauce:

  • 1/2 cup mayonnaise
  • 2 tsp dill relish
  • 2 tsp yellow mustard
  • 1 tsp sugar free ketchup
  • 1 tsp white wine vinegar
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder

Mix all together and store in refrigerator until ready to serve.

Ingredients for Salad

  • 1 lb ground beef, split into four patties
  • 4 slices American cheese
  • 4 cups chopped iceberg lettuce
  • 1/4 cup diced onion
  • 1/2 cup dill pickle chips
  • 1 tsp Sesame Seeds
  • salt and pepper

Make four hamburger patties, season with salt and pepper. Fry or grill burgers until desired doneness. Melt cheese on top of burgers. Divide lettuce between two plates and place two patties onto each bed of lettuce. Top with onions and pickles. Spread two tablespoons of sauce across burgers. Sprinkle sesame seeds over salad and enjoy!

Keto Low Carb Garlic Steak Bites

This is an easy quick meal you can whip up in no time. It’s perfect for the keto diet or if you aren’t keto, you could serve it with some noodles.

I used sirloin steak that we got when we purchased a 1/4 Cow. If you are interested in seeing how much beef we got you can watch my video here: https://youtu.be/GJ5s4d6vnoc

I cut the sirloin into bite sized cubes. I seasoned them with salt, pepper and garlic seasoning. This came out to about 1-1/2 lbs.

I used 4 T butter and a tablespoon or so of bacon grease to sauté the beef in.

I sliced half of an onion and added it to the melted butter. I added a tablespoon or so of chopped garlic.

Then I added the beef. I turned the meat every so often letting it brown on all sides.

Then I topped with Rosemary. I love the combination of beef, butter and Rosemary.

This was dinner. I served it with green beans and a salad. This took under an hour to prepay start to finish.




Keto BLT Pizza Low Carb

Here is my version of BLT Pizza. It is low carb and Keto friendly. I use fathead pizza dough as my crust. Here is a video on how I make the dough: Fathead Pizza Dough

I pre-bake my crusts and store them in the freezer. They thaw quickly and are great to have on hand when you get a pizza craving. I use Mayonnaise as my pizza sauce.

Next, I top with pre-cooked bacon chopped into bite size pieces.

Before going into the 400 degree oven, I top with mozzarella cheese.

Since the crust is pre-baked, I only need to melt and brown the cheese. This takes about 10-12 minutes.

Then I top with shredded iceberg lettuce and tomatoes.

Low Carb / Keto Stuffed Chicken Alfredo

This is my low carb stuffed chicken breast recipe. It is easy to make and can be made ahead of time and refrigerated or even frozen until ready to bake.

This recipe is for two large chicken breasts. You can adjust the recipe accordingly. You can even change up the ingredients to your liking. It’s a very flexible recipe.

Ingredients that I used:

  • 2 large Boneless skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup frozen spinach
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 cup Alfredo sauce

Add all ingredients except chicken and Alfredo sauce to a mixing bowl and mix thoroughly.

Butterfly the chicken breasts with a filet knife.

Put half of the filling mixture into each chicken breast. I like to face the opening of the chicken towards each other because I think it just melts better that way.

Top with a little more Italian seasoning and divide 1/2 cup of Alfredo onto each breast.

You can make your own Alfredo but I like this one from Sam’s Club. You can get a three pack for under $5!! This is the seasoning I like too from Sam’s.

I like to top the Alfredo with a little more Parmesan cheese because, well, cheese makes it better!

Bake in a preheated 350 degree oven for about 35 min.

I served asparagus with mine. I sautéed the asparagus in bacon fat until tender and topped with grated Parmesan cheese. Delish!
