Lasagna Stuffed Peppers

Ingredients:
- 2 bell peppers, cut in half and seeds cleaned out
- 1/2 lb ground beef
- 1/2 tsp salt
- Pepper to taste
- 1 tsp chopped garlic
- 8 oz low sugar marinara sauce
- 1/2 cup cottage cheese
- 4 oz shredded mozzarella cheese
- 1 tsp Italian seasoning
Method:
Preheat oven to 375 degrees. Cook and chop ground beef in medium skillet. Add salt, pepper & garlic. Cook until no longer pink. Drain fat. Add marinara and simmer for 10 minutes. Remove from heat. Add cottage cheese to meat sauce and stir. Equally distribute the meat sauce into the pepper halves. Place halves into an oven safe baking pan. Top with equal amounts of mozzarella. Sprinkle with Italian seasoning. Bake in a preheated 375 degree oven for 45 minutes.
