Chicken Tortilla Soup

Ingredients:

  • 1 tbsp. Olive Oil
  • 1/2 Cup Diced Onions
  • 2 Garlic Cloves, Minced
  • 1/2 tsp Salt
  • 2 Cups Cooked Shredded Chicken
  • 2 tsp. Chili Powder
  • 1 tsp. Dried Oregano
  • 28 oz. Diced Tomatoes
  • 2 Cups Chicken Stock
  • 1 4 oz. Can Diced Green Chilies
  • 1/2 Cup Cilantro Chopped
  • Instructions:
  • Sauté onions about 5 min. add garlic and saute another 2 minutes. add remaining ingredients and simmer about 20-30 minuets.
  • Makes 2 quarts

You may top with low carb tortilla chips

  3. Can you get Rotel canned tomatoes? They have chilis in them, if not maybe some other kind of pepper?

    Paula, what could I use instead of canned crushed chilies. Unable to find it here where I live. The soup really appeals to me and I would like to make it. I am such a soup person. Thanks a lot.
