Cheesy Chicken Enchilada Casserole

This casserole is a lot like my lasagna recipe but it has all the flavors of a Mexican enchilada dish.


  • 4-5 Skinless Chicken Thighs (cooked & shredded)
  • 4 Crepini Egg Wraps
  • 2 Tbsp taco seasoning
  • 2 cans 10 oz Enchilada Sauce
  • 12 oz Muenster Cheese
  • Sour Cream for Topping

Sprinkle seasoning over chicken. Layer wraps, chicken, sauce and cheese. Bake 375 degrees for 25-30 minutes or until cheese is brown and bubbly.
